Well, this went much more quickly than expected 
I rewrote the majority of the converter API over the last few days with Gallery in mind. Today I managed to make a start on one of them just to check I hadn't missed anything obvious in the API. I haven't
It only took a few hours and I had the majority of the coppermine converter done.
What I really need is some people with Coppermine DB's that they would be willing to let me test with
If you would be interested, please drop me an e-mail at stewart @ invisionpower.com. Usual stuff applies, no risk to current data, database would not be disclosed outside of Conversions Staff, and removed once tested etc. 
I also played with the design a tad, and I'm fairly happy with it now. Here's a quick screenshot of the new template. I should note that as usual, I stole CSS from IPB/IPD

Still considering when these will be released. It's unlikely the new API will be completely tested, and all of the current converters rewritten prior to the release of 2.2. Depending what happens between now and then and what else gets added, they may come out at some point after 2.2, or alongside 3.0, or Gallery 2.1 (No, I have no idea on the release date on any of these). They will likely be offered on the conversion service before then
