What do you define as sensitive information?
By default, most information considered sensitive is not available to your members. Email addresses and IP addresses for instance cannot be viewed by your members unless you explicitly give them the ability through your ACP configuration.

Passwords are encrypted. You can choose not to save IP addresses. You can use hidden forums, only accessible to those usergroups you give access to. You can restrict usergroups from viewing profiles.
Unless I am missing something, there are no privacy settings that users can set themselves..
