I would like the ability to choose to be able to edit and make changes to a blog entry without having to republish it - and in doing so losing the original date of the post.

If anyone prefers to use the current settings they can, but wordpress has this flexibility and for my needs it is much more user friendly.
If I want to go and change a typing error or or add any extra info without losing the original post date, I can't at the moment.

I don't know what other people's needs or feelings are regarding this but I think at least providing this facility as an option of choice would be good.

Could you please clarify what you are referring to here? When I edit a blog entry the original publish date remains intact, it does not revert to the current time.
