IP.Board runs from a single domain (IP.Content can be run from an external domain/subdomain). There is no built in functionality to run IP.Board from site.com, and the mobile version from m.site.com (or any similar combination). It is possible with some .htaccess work and some conf_global.php modifications you could do this yourself, however it would not be something we would be able to support or assist with.

If I Signed Up For The Demo Will I Have Access To These Files And Be Able To Edit And Have A Go Myself?

The demo system is a hosted system and you will not have access to any of the actual files, I'm afraid.
