IPB 2.3.6 is nearing its end of life, so installing 3.0.x is highly recommended.
IPB3 is highly optimized and performs quite well on large sites; Collin1000's list has many good examples of this. We try to keep the codebase as clean as possible.
Since we cater to such a large variety of users, we'll obviously have some features that you'll consider useless, however probably all of the features you may not want (Facebook connect, status updates, Twitter connect in IPB 3.1, etc.) can be disabled.
Our plugin/mod system is generally quite powerful and easy to use - Do you have any specific questions we can answer?
Skins (styles) are very easy to create and edit; the best way to get a feel for them and the other things you're wondering about would probably be to sign up for a demo and play around with it.
