I'm relatively certain that attachments, pms and topic view counts are all converted. I do know that passwords are retained (you do not need to reset them upon converting).
I am not positive about the others so I will leave that for Mark to answer, as he handles conversions usually.

Yes, you can. In 3.x you would just map the service in the ACP and your members can easily use the media tag for this. Note that I fixed a bug today in RC1 that prevented vimeo.com movies from working in IE, so if you are looking to use IPB 3.x you may want to hold off on posting movies until RC2 is released.

Yes and no. Each user can elect whether or not to require friendship requests to be approved first. The change we implemented in IPB 3 is that now when you request a user to be your friend (i.e. they will show on your friends list), that friendship relationship is automatically mutual (you will show on their friends list).
